Perfect Day + Homemade Larabars

I have to say it: today was perfect. 6am wake up to go to the gym with hubby (before he had to get ready for work) + we got our sweat on. Workout: 5 mi - 45:48 elliptical + 15 mins abs/weights while hubby ran 8.5 miles on Mr.Treadmill at record speeds, like always.

We split a banana at 6:15am

Blueberry pancake fail:

"hey maybe I should use just one egg instead of 1 + 2 egg whites, and I can use flaxseed meal instead!" fail. fail. fail.

Didn't I learn, a short while ago, that flaxseed meal is not a good egg substitute for bfast?

I topped this bad boy bowl with low-fat plain yogurt, cinnamon, raisins, almonds + 1/2 a banana.

it was actually pretty good and left cool colors on my bowl. but it wasn't pancakes :(

After cooking + reading for 10 hours... I ate lunch:

steamed brocc, 1 peach (nectarine?) 1 kiwi, sammich (open for viewers pleasure) half avocado, mustard, spinach, celery, bell pepper, half tomato, half slice turkey (animal killer?!) on 2 slices whole wheat bread it was fantastically magical in my mouth.

Stove top oats for the week:

rice milk, mmmmm....!


spinach salad with red wine vinegar, olive oil, dash o' parm, chopped up almonds, raisins, celery + side of homecooked pintos + 1/2 sweet potato [baked to utter joyous flavors]

Homemade Larabars!

mini versions, 'cause it was killing me to grind up so many raw almonds (expensive, here in Costco land) + our small batch of dates was getting smaller..

Here's the recipe's link I used happily: laralaralara
Pretty much 25 almonds, 3 dates + dashes of other ingredients per every 2 mini-mini-larabars. Her recipe was 1/4 cup chopped dates, 1/4 cup dry fruit, 1/3 cup almonds/nuts then adding other ingredients from there. I used my food processor (crazy fun!) and the bars nut/date consistency was spot on :)

I printed out all the Larabar flavors and their ingredients, and tweaked with a couple. 2 ginger cookie bars + 4 chocolate cinnamon bars :)


yogurt + frozen strawberries + agave + raw oats + raisins = goodnight.

Happy Owner of a Food Processor

So, look what I was gifted with!


I thought Saturday was a great day, but Sunday was pretty stinkin' awesome as well. Loved every minute? Pretty much.

  2. Church - Adoration
  3. Cafe Flora - Vegan Asparagus "egg" scramble w/salad
  4. Rest + Relaxation
  5. Best birthday gift I could ask for!
  6. Pizza
  7. Movie: Usual Suspects (go. watch. it.)
  8. Blog + writing out long "to do" list for Memorial Day - yay!
Oh, and the fabulous food processor from my lovely family? I want to make pestos for pizzas + salads + sandwiches, Larabars, carrot breads, veggie burgers, black bean brownies + like 8 million other things. I am so excited I can hardly stand it! Ignore my Memorial Day checklist + hang out in the kitchen all day? Sounds like a plan, Stan!

Whole Foods + Araya's Vegetarian Place

Wonderful Saturday:

Green Lake Run with the hubby. Light rain attack, but awesome worship music on the iPod made the 58 min run 100% worth while.

my stats: 10:25K - 58:40


Starbucks oatmeal with mixed nuts + dried fruit + banana + cinnamon + Shape magazine


Whole Foods: first time ever! I wanted to buy everything I saw. If I were a millionaire, I might spend all my hard-earned cash at this fancy (huge!) store. First time buys: zucchini, tofu, tempeh, greek yogurt, fancy unsweetened ketchup,

peaches (can you believe I have never had a fresh peach in my teen/adult life? insane), 2 drumsticks + 1 chicken breast from vegetarian fed chickens! + loads of happiness.


Eggs with bell pepper, spinach, avocado, tomato, serrano chili + Mack's Flax bread :)


rest, relax, chill out


How much do I really eat? I love making mini-lists like this. Keeps me sane.


Await Birthday Dinner #2: Araya's Vegetarian Place. 2nd place for best vegetarian restaurant in Seattle. (1st place eats was visited Tuesday!) Tomorrow? The restaurant that earned 3rd place? or re-visit Cafe Flora, it was too good to just visit once!

Veggie Loving Pasta Primeravera

It's Friday! I'm so happy, Fridays are so needed sometimes. I feel like if I had to work with a bunch of toddlers for only one more day, I might just pass out.. 5 days is plenty, thank you. So last weekend I bought a yellow squash for the first time evah (organic, that is!) and I found this amazing veggie-packed recipe that I called for a little squash :)

I pulled the recipe from, and after tweaking the recipe a bit, here's what I ended up with (completely amaaazing pasta is what I came up with, yo!)

"Love Veggies" Pasta Primavera:

  • 1 yellow squash
  • 5 asparagus spears
  • 2-4 tomatoes
  • 3 carrot stalks
  • red bell pepper
  • zucchini + green beans (I didn't have any, so I omitted these)
  • whole wheat pasta
  • olive oil
  • garlic + onion
  • parsley, + basil
  • italian seasoning
  • balsamic or red wine vinegar
  • lemon/lime juice + zest
  • dash o' salt n peppah
  • your favorite pasta-loving cheese (I used a little bit of Parmesan)
  • raw spinach, cut into skinny strips
Do it this way:
  1. Preheat oven to 450* line baking sheet with foil
  2. Place water in pot, bring to boil, add pasta
  3. Dice up veggies, toss with olive oil, salt, pepper, italian seasoning, nice squeeze of lime juice
  4. Place nicely coated veggies onto baking sheet, roast until tender (about 15 mins)
  5. Heat nicely sized pot with olive oil + add garlic, onion (I used dried)
  6. Mix in cooked pasta, lemon zest, basil, parsley, and vinegar.
  7. Gently toss and cook until heated through.
  8. Remove from heat and transfer to a large bowl (or huge tupperware for next-day eats!)
  9. Toss with roasted vegetables and sprinkle with *your fav* pasta cheese
  10. Add raw spinach on top, mix it all up, it adds extra greens!

Ah, this was the most delicious pasta I have ever had in my life. I am not even exaggerating a little tiny bit. 100% best pasta, ever. No boundaries with the veggies, either. This is huge! Ah, well, I also ate some other delights today:


1/2 cup raw oats + 1/4 cup muesli + cinnamon + flaxseed meal + raisins + almonds + banana + organic rice milk :)


Love this 8am snack, hasn't gotten boring yet!


Almond butter + cinnamon + raisin sandwich with all those colorful goodies, and some raisins + almonds, since we ran out of cucumber + celery and I had room in mr. tupperware!

Workout: 5 mi - 49:43 elliptical + 15 mins abs/weights ~ Fridays are usually my chill 5K run/walk days with my favorite sister ever, but it was raining like insanely world record type rain all afternoon so we skipped out + I headed to the gym. I took it slow, though, 'cause I have to prepare myself for my long Saturday morning run - hoping to keep my 10.25K time under 58 mins!

Then I ate this again:

1 nanner, almonds, raisins, cinnamon. Yes.


Pasta Primavera + a huge side of home-cooked pinto beans + steamed cauliflower all diced up + seasoned with paprika. I seriously ate only half the bowl, it was so filling! Didn't really need it, but felt the need to empty the fridge (bad excuse for eating more than one needs!)

It was love, pure love.

Friday night happy face:

1 organic apple, yogurt, cinnamon, raw oats, frozen berries. My favorite.

I'm off to research why my foot falls asleep when I'm finishing up my elliptical work outs - what's that all about? And maybe I'll look up some fancy recipes for next week's dinner menu! Woah, guess who almost forgot that she has a 3 day weekend?? Party over here? Sounds good.
