Massaged Kale on Rye Bread

Hubby away on business trip, time to go into sleep-early-bake-and-cook-forever mode. 8:30? You look like bedtime. PS: I finally got my recipe page up! That's what I've been working on for the past almost 2 hours, so I'm kind of in the mood to exit computer land. I'm so glad it's up, though. I've been wanting to create it for a very long time. Happy days :)

Mornin'

rice milk overnight oats with chias, half a banana, almond butter, homemade granola, blueberries

Snackage:

fruity.

Lunch:

tupperware lunch (hello massaged kale!) + 2 slices rye breads.

Workout: 6mi elliptical - 57:23 + weights
Felt so good! The weights were killer after the 6 miles, but I seriously wanted to fly after I left that gym, endorphins much?

okay, I have no words, it was insanely unforgettable.


Something about adding too much paprika to a garbanzo/oat/pinto bean pattie that just makes my taste buds go wild. Paprika is now my new bff, is that okay?

I just ate 2 huge spoonfuls of yogurt, mixed with cinnamon, muesli, raisins, almonds, frozen blueberries, and flaxseed meal. Lovely dessert. Now? Lovely bedtime.

A Blessing

Did I know, as I ate this delightful bowl of overnight oats [made with rice milk, rolled oats, cinnamon, raisins, chia seeds, and a wheat germ, frozen blueberries, banana topping], that the afternoon would entail such a blessing? Did I have a clue, as I ate a not-so-juicy plum and later a fantastically satisfying orange, that anything special was going to complete my day only some 6 hours later? Did that homemade rye bread sammie [with almond butter, cinnamon, and raisins, hanging out with veggies and fruit,] give me any hints to how happy I'd feel after a leisurely hour spent at my old high school's track? How about the otsu [amazing recipe from 101cookbooks.com] and the massaged kale [bloggies are wondrous for introducing this technique to me! This babe contained lime juice, olive oil, a chunk of pear, all diced up, and some raisins and almond pieces] - who knew they'd be following such a lovely jog, without pain, but only with a goofy grin that lasted all 45 minutes of it.













God is HUGE!
His timing is perfect,
His ways are flawless,
His blessings are endless.

That's right, God blessed me with the ability to jog today, without pain. I left the music at home, and took in His beauty and His creation in the trees, sun, and blue skies that surrounded me. Then I took a spot on His green grass, tackled some ab + arm movements, felt a nice burn, and thanked Him for the amazing gift that is His presence, His world, and this life.

Veggie Lettuce Wraps

Goodness gracious. I woke up needing a bowl of this:

1/2 cup yogurt, 1/2 cup rice milk, frozen banana, strawberries, blueberries, 1 cup oats: all blended to perfection (with ice!) and topped with the good stuff.



Beets:

most beautiful sight my eyes ever did see!


orange, unsalted peanuts.

Sammich:

homemade rye breads, avocado, tomato, mustard, green onion, zucchini, red bell + serrano chili (burn my face off 'cause of it's spicy-ness, much?)



PF CHANGS:

tofu lettuce wraps, if you will. With a side of brown rice, since this dish was an appetizer sized fella. Shoot, just 5 dollars? I'll eat this every day man! Very flavorful tofu, coulda sworn they accidentally gave me chicken er somethin. Ice burg lettuce tasted like water, but had a good crunch to it. Brown rice: super soft, fluffy, delightful. Definitely making these at home from now on! So easy + gorgeous in my mouth.

Dessert:

yogurt, frozen berries, frozen nectarine (thank you, awful fridge that freezes all of our fruit...) topped with loads of rolled oats, almonds, raisins, but that's kind of obvious, isn't it?

Oh snap, 'tis later than I had hoped to go to bed at!

My First Sushi Experience

...and hubby's 10 mile race recap!

It all began with a morning snack + a mini-workout [yoogaa]




Then I packed snacks + fuel for post-race inhaling:

overnight oats + ice = cold oats later? no.
overnight oats + ice = watery oats later. Bummer.


I ate a mug of oats.

He got lost a few times, and the mile markers were messed with by some teens who were running with a high school group. Most of the hardcore finishers were pretty bummed out about it 'cause their official finish times weren't 100% accurate, but Eduardo said he enjoyed it mucho and is happy with his results. What whaaat :)

Bread Fiasco!

My aunt passed me 2 more recipes: a Rye Bread fella and a Cinnamon Bread that was too tempting to "save for next weekend" so I printed her 2 recipes, added some pics I found on google (hah) and managed my time in a pretty nice manner (I made these before the pizza, and while they were rising for an hour, I prepared the pizza. Once the pizza was out of the oven, the 2 loaves had finished their 2nd rise and were ready to be popped in the oven. It was joyous).

Using the same basic ingredients + instructions for my whole wheat loaves, I came up with this:


whole wheat flour, gluten flour, cinnamon, nutmeg, ginger, raisin (not pictured), flaxseed + salt business


dark rye flour, tiny bit of whole wheat flour, gluten flour (next time I'll make it 100% gluten free but I was a bit intimidated by that idea this time), coriander seeds (same as caraway, right?), unsweetened cocoa powder, dash o' salt.

bootiful. I think the rye guy needed more flour, but I was scared to pass the max amount of flour that was asked in the recipe - trying to avoid a dry loaf. We'll see how these loaves taste + adjust ingredients accordingly.

Sushi!
Birthdays are fun stuff.

From left: wasabi + ginger (spice + palette cleanser), 3 avocado cucumber, 1 okra, 1 inari, 2 roasted bell pepper, 1 grilled portabella mushroom, 1 enoki mushroom + chives.

avocado cukes: 5 stars
okra: shoulda been raw
inari: tofu, soft, seasoned
bell peppah: delightful
portabella: my first time, tasty.
shroom + chives: fantastical.

Insanely good, incredibly simple flavors, unforgettable little plate of goodies. Honestly, I couldn't stop taking about how I wanted to return to this restaurant, and how crazy it was that I had never had sushi before. But then I realized: why not just make sushi at home? It'd be fantastically easy, so... it's on my to-do list.

Loaded Lasagna

I felt, le dehydrated.

Breakfast:

tastes a lot like cake, in a bowl, with a spoon and frozen fruit.
[rice milk, rolled oats, muesli, cinnamon, banana, wheat germ, frozen blueberries, creamy almond butter, raisins, almonds a sprinkle of kashi golean crunch!]

Fruit from 830am - 5pm

Lunch:

this is an impostor photo, for I to-tal-lee forgot to snap a pic of the real deal. But it was along the same almond butter, cinnamon, raisin sammie on homemade breads.

New EATS:

Tofu: not so new, but it's been a while!
Kale: hubby's request, I'm nervous but excited to try it again.
Bulgar: 'cause all you bloggers do this grain, so I wanna do.
Pure Sesame Oil: 'cause I'm ready for it to rock my world.

Lasagna Bomb:

spinach, zucchini, bell pepper, serrano chili, tomatoes


2 chicken breasts for 2 people [so simple.] and mushroom chunky pasta sauce.
[make it vegan: omit chickens + brown some eggplant + more veggies!]


whole wheat lasagna noodles, about 5 used in total.

Costco won, big time:

3 pounds of ground flaxseed? I sure do!
[in my breads, in my yogurts, in my cookies, in my oats, in my veggie burgers, in mai cupcakes?! bagels, homemade pasta? granola barz, you know. evary-thing]

PS: the lasagna was (oddly) followed by the strangest and most uncomfortable stomach pains I think I've had in 8 million years. Can I pretend it was the chicken, and get on with my life? Ah, to be a Vegan in Mexico City. It just doesn't seem like the best idea.
