A Clean Start

Hi favorite blog land in the universe!! I miss this place. Vacation time + being slightly lazy is done with, I'm ready to wake up motivated and strong for some good AM workouts, to go to work with serving Jesus and serving others in mind, to eat rad (and creative) dinners each night, to cook with passion and to dive into some really good books. I'm stoked for this new week!

Goal:

start this book tonight, and finish by Sunday night :)

Sad Goodbyes:

Bummer news: Our Christmas tree is no longer a part of us. But a bigger, cleaner dining room is back in action and it feels stinkin' good!

We got SNOW!

for one lovely, cold night...

and one short lived, snow-covered morning... then it melted and we have found ourselves swimming in rain every day since.

Breakfast has been...

slightly repetitive, yet delicious, filling, and nutrient-loaded.

oats with chia, rice milk, almond butter, frozen blueberries, banana, amaranth.

green monsters made with normals kale, swiss kale, spinach, frozen fruit, unsweetened cocoa powder, vanilla, dates and rice milk

8 hundred toppings including: wheat germ, homemade granola.

more green blends.

more wheat germ + homemade granola and friends.

Snackage!

fruits...

fruits and greens....

more fruits, more veg, more homemade granola bars...

Colorful Lunch Plates:

homemade bread, pinto/oat/spinach burgers

veg avocado sandwich, half sweet potato with pinto beans

pinto/oat/spinach/veg smiley faces.

Dinner Parties:

salmon burger/whole grain bun/melon at Red Robins with lovely girls from work land, a burger that set very, very well in my tummy while we watched Tangled which is the cutest film I have ever laid my eyes on!

lentil quinoa soup without my love bug: celery which made it taste a whole not like salt which made it flavorless but nicely colorful and rich. We got over it + properly inhaled burning hot bowls of soups.

with corn tortillas :)

spaghetti + 2 tomatoes cooked atop + chicken + italian seasoning + cauli/brocc with red pepper flakes + salt.

Dessert Bowls:

milk, fruit, oats, raisins, cinnamon, almonds and spoon.

rice milk, banana, apple, oats, cinnamon, unsweetened cocoa powder and spoon.

I'm so happy it's the weekend! A start to a brand new week, brand new year (even though January 2011 is more than half way over!), a rad book about Dean Karnazes who ran 50 marathons in 50 days in 50 states and being with the love of my life! And I'm pretty excited to try and eat some cabbage for the first time in my life - we'll see how that one goes with my purple friend in the fridge.

Rejoice always, pray continually,
give thanks in all circumstances;
for this is God’s will for you in Christ Jesus.
Thessalonians 5:16-18
