Almond Rice Vegan Loaf

This was a grand day. I only wish I had the time to describe it all! But alas, the photos will have to suffice for tonight, for I must be responsible and get a good nights sleep in. Shucks!

  • 1/2 cup oats
  • 1 cup rice milk
  • 1 tbsp: wheat germ, ground flaxseed
  • 1 tsp: cinnamon, cocoa powder
  • 1/2 banana, mashed (other half for topping)
  • 1 handful raisins

complete with: dried figs, frozen blueberries, and crunchy peanut butter on the side, for side-swiping, stealing, and delicious consumption.


beans + steel cut oats for the week ahead

  • 1 cup brown rice, cooked
  • 1/2 cup almonds, chopped into bits
  • 1 slice whole wheat bread
  • 1/4 cup wheat germ
  • 1 tbsp liquid aminos
  • 1 tsp diced onion + garlic, parsley + basil
  • 1 tsp olive oil
  • 1 handful kale, torn into bits
  1. preheat oven 350*
  2. food process almonds, bread, wheat germ (or just throw it all into the food processor except kale/rice)
  3. combine rest of the ingredients in a bowl
  4. pour into bread-like baking dish, bake for 40 mins or so, covering at last 10 for a nice crispy top :)

insanely delicious.
