Sunny 13K + Living in the Kitchen

Saturday was so jolly good that I seemed to have left blogging on the back burner! That, and brown rice, quinoa, steel cut oats, pinto beans, brussel sprouts, pinto spinach burgers, bell pepper, broccoli aaaand corn tortillas. Did you guess it? I was happily in the kitchen all afternoon, and life just felt good.

We went for a run at Green Lake in the wee hours of the AM and ate sports bars from last weeks race, he tackled a half marathon and then some (15 miles) and I shot for a distance record and survived 13km! I kind of felt beastly strong afterward, even though I moved at a turtle-like pace and didn't feel capable of speeding things up. It was a beauuuuutiiiiful day, our first sunny run in what feels like an entire year! So, naturally I couldn't help myself and took about 8,000 photos with hubby's phone.

Then food went down, and it was uh-mazing. Let's view this menu, man!

Pinto Bean Spinach Patties

  • 2 cups oats
  • 2 cups cooked beans
  • 3 handfuls spinach
  • paprika, salt, pepper, red pepper flakes
  • flaxseed, wheat germ, onion, garlic
  • homemade salsa (tomatoes, serrano chili peppers, salt, water)
  • freeze 'em!

3 Step Veggie Spring Rolls!

  1. pick your veg
  2. pick your sauce (almond butter, pepper flakes, red wine vinegar)
  3. wrap, cut, consume!

oh my. simplicity.


2 patties, guacamole (avocado, lime juice, salsa), tomatoes, bell pepper, potato fries baked with olive oil and wheat germ, broccoli love.

Purple Ice Cream!

  • soy milk
  • half frozen banana
  • frozen strawberries + blueberries

coconut, muesli, carob chips!

Then we watched Scott Pilgrim Vs. The World
and it brought us to 12am, so we slept like babies.
