Quinoa-Wrapped Cabbage Burgers

hubby was sent out of town for work, so I am definitely going into sleep-early-wake-early-workout-hard-gotowork-come-home-wait-patiently mode. All I want is my bed, and for him to come back. Thankfully, his sickly symptoms all went away and he's feeling so much better than a few nights ago! God gave him so much strength, I just pray he can get through this next day or two nicely.

(borrow this recipe!)

Dry:

  • 1/4 cup rolled oats
  • 1/2 cup puffed millet
  • 2 tbsp wheat germ
  • 1 tbsp whole wheat flour
  • 1 tbsp chia seeds
  • baking powder
  • cinnamon, unsweetened special dark cocoa powder

Wet:

  • 1 flax egg (1 tbsp milled flax + 3 tbsp water)
  • 3 tbsp applesauce
  • 1/2 cup rice milk/water mix

yes: coconut, almond butter, raisins, pumpkin seeds, more chia.


froze these babes and toasted them a few days later! Incredible!

adapted from this recipe

stuff 'em with:
  • 1 medium head red cabbage, food processed,
  • 1 cup cooked pinto beans
  • onion
  • red pepper flakes
  • chili powder
  • salt + pepper to taste


folded inside this dough:

  • 1/4 cup warm water
  • 1 package active dry yeast (2 1/4 teaspoons)
  • 2 cups quinoa flour (throw quinoa into a blender and make magic!)
  • 3/4 cup rice milk (scalded and returned to room temperature)
  • salt
  • 1 flax egg (1 tbsp milled flax, 3 tbsp water)

    "Scald milk over the stove or in the microwave; let cool to room temperature. In a large bowl, add warm water and gently stir in yeast. Let stand 5 minutes, do not stir. The mixture should bubble. Blend in milk, salt, flax egg and flour. Mix well. Turn dough out on a floured surface and knead several minutes until smooth and elastic. (If the dough is tacky, add more flour by the tablespoonful and incorporate. It may need 2 – 4 tablespoons of flour. The final dough should be supple and smooth without being overworked.) Place dough in a lightly greased bowl. Cover bowl with damp cloth; let rise 30 minutes in warm location."

fill, wrap, seam side down, onto sprayed baking sheet


bake 375* for 20 minutes or until both sides are golden brown

we got our chia in the mail today, from a new company. I love it 'cause they sent us a little letter and some samples with it! I'm kind of excited for this 5lb bag to be empty so we can buy more from these guys, they're wonderful!

    P.S. Because of you, I bought the Hershey's dark cocoa powder on Monday......dear lordy!!!!! It's soooooo yummy!!!
