Smoked Paprika Flat Bread + Hemp Protein Muffins

You know those weeks when your husband's boss sends him out of town suddenly, and he ends up being gone for 2 days, and the grains you had cooked to fill up the bellies of two people for a week-long period end up sitting in the fridge, untouched, ready to grow bacteria if you don't hurry up and use them in the next 48 hours? Well, leftovers, here's to you.

the last of the kale as well as frozen banana, blueberries, dark cocoa powder, wheat germ, rolled oats and a food processor

the last few grapes about to shrivel up and lose their heartbeat, with kamut puffs, pumpkin seeds, coconut and chia seeds

1/4 cup week-old cooked rice and quinoa thrown in a food processor with loads of paprika, parsley bits, thyme and basil.

spray parchment with oil, flatten out sticky dough with wet hands, bake at 350* for a good 30 minutes, cut into squares for sammiches!

spinach pattie from the freezer, greens, mustard + orange

a gift from these guys

a cup and a half of steel cut oats that were definitely cooked last Sunday and a boat load of green hemp protein powder

do it, they tasted like banana cake!

almond butter and coconut? it was love at first inhale.

not leftovers, I'm sorry. But freshly cooked pintos, they were.

the last of the cucumber before the soggy holes start taking form, with baked tofu/sesame seeds, bell pepper, carrots, mixed greens, spicy nut butter sauce [almond butter, red wine vinegar or balsamic, red pepper flakes and magic]

oh brussels, you do the body good.

tomorrow's dinner, definitely not leftovers unless you count the celery!

my next best friend: fig newtons

I've missed those guys, they used to make me so happy inside! And now that I have about 2 cups of dry figs in the cupboard, how could I not make those babies? All on it. Tomorrow night is the night.

"But You, O Lord, are a God full of compassion, and gracious,
Longsuffering and abundant in mercy and truth."
Psalm 86:15
