
Super Simple Banana Walnut Cakes
serves 1
• 1/2 banana, mashed
• 1/2 banana, diced into disks
• 1/2 cup rolled oats
• 1/2 cup rice milk + a few splashes
• 1/2 cup walnuts, crushed
• 1 tbsp ground flaxseed
• 1 tbsp chia seeds,
• 1 tbsp wheat germ
• 1 tsp vanilla
• 1 tsp cinnamon
• 1 tsp baking powder
• 1/2 tsp baking soda
Combine wet, add dry, add more liquid if needed. Brown on medium heat on a lightly greased pan. Layer with banana slices, almond butter, top with fig jam and sunflower seeds! I love simple breakfasts, they taste like heaven.

Italian Quinoa Flatbread
inspired by Keep n' the Faith
makes 6-8 slices
• 1 cup cooked quinoa/rice
• 1 cup ground flaxseed
• 1 1/2 cups rolled oats
• 1/2 cup water
• 1 tbsp italian seasoning
• 1-2 tbsp cornmeal, to prevent sticking
Preheat oven to 375*. Throw all ingredients, except water and cornmeal, in a food processor. Once all is nicely combined, slowly incorporate water, process once more. Prep counter with a thin layer of cornmeal, plop slightly sticky dough on top, flatten out a bit with fists, and sprinkle cornmeal atop it. Roll out dough 'till about 1/4 inch thick, in any shape you like. Lightly grease a baking sheet and place dough on top. Bake for 15 minutes, cut into squares and flip, then bake for ten. Let cool on cooling rack before placing in tupperware or a bread bag.

Happy Red Pepper Almond Hummus
adapted by Eat, Drink and Be Vegan
Makes about 3 cups
• 2 cups cooked garbanzos
• 1/2 cup red bell pepper, diced
• 1/2 cup almonds
• 2 tbps olive oil
• 2 tbsp red wine vinegar
• 1 small garlic clove, sliced
• 1 tsp red pepper flakes
• Salt and pepper, to taste
Throw almonds in food processor and let them spin 'till a powder forms. Add remaining ingredients and process until smooth. Add water to thin dip, if desired (I like the thickness, so I didn't add any water and it turned out wonderful). Garnish with almonds, and a drizzle of olive oil.

Adapted from Boastful Baker's fig newton filling
Makes 2 1/2 cups
• 1 1/2 cups dried figs, diced
• 1 1/2 - 2 cups water
• 1 banana, mashed
• 1 tbsp orange zest
Bring water to a boil, add figs, banana and orange zest. Return to boil, reduce heat to medium-low and let simmer for an hour and a half. Transfer to glass dish or jar, let cool completely before storing in fridge. Spread on toast, sammies, top pancakes, waffles, or oatmeal. It's amazingly sweet and it tastes incredible on day two!!

Phew! I love sharing recipes. I think it's my new favorite verb. Today was wonderful, as was church, as was cooking, as was pizza, as was movie night (Flipped - go see it, hubby said it was the best love story he's ever watched [agreed]. Amazin'). Besides all of the lovely recipes that went down today, a bunch of other awesome food made an appearance as well. Run down in one... two... THREE!

sigh... if only weekends lasted for weeks! time to wind down, and mentally prep for the week ahead. Giving it to God, trusting in His plans for my life and giving Him any of the road bumps I run into this week! Trust. I must admit, I'm a bit nervous for this week since I will be attempting to run again for the first time in a full week. I know it's in God's hands and He knows exactly what He is doing, so I need to prepare for whatever is about to come my way. Oh 5:00am, what do you have prepared for me?

I inspired that bread? Wow, howd that happen? lol That bread sounds delicious! I am totally going to give your much improved version a try :) All the recipes here look amazing actually, ESPECIALLY the pancakes!!
