Indescribable Love

We know how much God loves us, and we have put our trust in Him. God is love, and all who live in love live in God, and God lives in them. 1 John 4:16

God's love for all of us is indescribable, infinite, more than enough, satisfying, rich, intense, beautiful, breath taking, true, deep, wonderful and real. He showed us His great love in this: while we were sinners, He sent His one and only Son to die on a cross for us, so that we could be with Him in Heaven once this life is over.

I'm so thankful, I can hardly express it. I want to praise His name and worship Him all day and all night - even though the bumps in this rocky life seem to always success at distracting me. But I guess infinite worship to God is something we get to look forward to in Heaven. I'll take it. :)

Oh Friday! I am so glad it finally arrived. It wasn't the most incredible day of my life, but it was a gem in its own. There was a kale beast involved, a tupperware full of veggies, quinoa, and black beans from Qdoba Mexican Grill (yes, I made a trip Qdoba simply for a cup of black beans), boat loads of fruit, a few ohmygoshthesetastesoflippingood cocoa banana bites with almond butter and a special dinner with my hubby in Bellevue as we said goodbye and wished goodluck to one of his co-workers who is off to Florida to start a new life (longest sentence ever?). PS: sleep time was 11:30pm, so, needless to say, I fell asleep before posting this.

Cocoa Banana BITES [delicious creation]

Cocoa Banana Bites
Makes about 5 million cookies of different shapes and sizes
or: 2 dozen depending on their size

*feel free to cut the recipe in half, for I doubled it simply to use up mushy bananas!

6 bananas, mashed
1/2 cup applesauce
3 tbsp chia gel (1 pt chia 3 pts water, let it sit for 5 mins or more = 1 tbsp chia gel)
2 tsp vanilla
4 cups oats
1/2 cup unsweetened cocoa powder
2 tbsp sunflower seeds, roasted unsalted
1 tbsp cinnamon
2 tsp baking powder

simply preheat ye ol' oven to 350F and line a baking sheet with parchment. add wet ingredients to a medium sized bowl with your mashed (but not pureed) bananas, whisk the dry ingredients together in a separate bowl. combine the two thoroughly. bake for about 15-20 mins or until the bottoms are slightly golden (and by golden I mean darker than dark 'cause their chocolate brown already!)

Last step: eat a cocoa banana cookie with almond butter on top. Just do it! Hope everyone's Friday tasted as good as this one did, and if not, there is always Saturday :)
