Vegan Christmas Recipes

I love eating with my family because it most likely means I will be preparing a fancy-pants dish to share with loved ones. This is a challenge each time we gather since I want to hear them, "ooh" and "aweee" at plant-based meals, so I have no room for error. Thankfully, the internet exists as well as amazing cooks 'round the globe so I must not fear the kitchen and all it beholds! Here's what I made for this year's festivities:

Dr. Fuhrman's Thousand Island Dressing:


Boo... That was sort of rude of me. I don't actually have the recipe to share, but if want the measurements... Buy his book! It's fabulous: Eat to Live.

Raw Pumpkin Pie:


This pie was amazing! Thanks to Sweetly Raw, recipe link here! I followed her recipe almost exactly. Then I realized I had soaked a few cups of cashews, assuming her recipe needed them, noticed the ingredient list had coconut oil instead of nuts for the filling, and changed things up. I used cashew butter (threw soaked cashews in a food processor until creamy) instead of coconut oil, and canned pumpkin instead of raw pie pumpkin.

Cashew Ranch Dressing


Also from Dr.Fuhrman's book. It ended up being too sweet for my taste, though, so next time I would use a lot less dates. It almost tasted like the kale was dressed in frosting! Tasted great mixed with lentil meatballs, though. And after a few days, it tasted even better. The sweetness died down a little and the bold, rich, cashew flavor stood out. I love how well kale sits in the fridge, even covered in dressing!

Pumpkin Apple Walnut Harvest Rice

This was my favorite dish, hands down. Kathy over at Healthy. Happy. Life. posted this one on her blog and I found it through a mad search for Winter/Fall recipes. It was absolutely delicious, easy to make and a big hit for this meat-eating family! I will definitely be making this again, and again, and again. Hubby asked me to make it without onion next time, but you can't taste it at all - it's more of a, "oh snap - I see onion in this spoonful" issue. I vote more onion!

Hubby's Kale Salad with Balsamic
 Since my lovely husband isn't a fan of anything garlic or onion - I made him a special kale salad with equal parts olive oil and balsamic vinegar, with apple, walnuts, raisins and some pepper. He said it was delicious - score! I think I used about 2 tablespoons of olive oil and balsamic for about 3 cups of cut up kale. Superb.

All in all, it was a very salad friendly Christmas. I'm a fan of sharing the love of greens on the holidays, as you can see. If it's the only time they get greens, so be it!



Here's to catching up with the rest of what went down toward the end of 2012 and how 2013 has been thus far - oh my, how behind on blogging I am. It's okay, I'm enjoying my chubby bubbly boy and cherishing every second away from the computer. Can I return to blogging in February? Sweet!

That Christmas Day 2012

Then there was Christmas. It was filled with fabulous eats, family, laughter, and baby. Love. Grandma bought Santi his Christmas tux, it cost $4,000 and had to be tailored to fit his round tummy. He thinks he looks sharp. We agree. It didn't cost $4,000. It wasn't tailored. But oh-my-cuteness!


Green smoothies to start the day (1 banana, 4 kale leaves, 1 lemon, 1 orange, 1 handful broccoli, 3/4 cup pineapple, ginger knob, water, ice!), ham, apple yam strata, apple pumpkin rice, kale salad with cashew dressing, kale salad with apple n' balsamic olive oil dressing, baked stuffed apples (Oh She Glows' recipe), more no-bake pumpkin pie, joy.

 Much like Christmas Eve, Santi was a little over-stimulated and needed longer naps on this particular day. So at the end of the evening, he wasn't really up for a family picture. Instead of throwing in the towel and accepting the sad fact that there would not be a happy grin from our babe in the group photo, we decided to play along with the 3 month old and copy his every emotion for photo #2. I think it's a real gem. I want to make a poster out of this next picture.




Christmas is beautiful.  I much enjoyed receiving socks and pajamas this year. I absolutely feel blessed to be part of this family. I want more babies.

Oh, Christmas Eve!

Ha. I forgot? I ran out of time? I spent my time doing other activities? Here is Christmas Eve, baby style! We dined on fruit, veggies, romaine with parmesan and croutons, kale with italian-tofu dressing (Dr.Fuhrman's recipe!), garlic bread, lentil meatballs, Costco lasagna, no-bake pumpkin pie, coconut whip cream, and a chocolate chip delight!

And he wasn't the least bit tired after the almost-zero nap-filled day, the over-stimulation and the lack of structure! She said ever so sarcastically. He was a grump. Yet we all had an amazing time at my grandma's home, and he slept the fussiness off that night. Hooray!
