Buckwheat Sunflower Seed Carrot Pizza

makes one, nice-sized pizza
1 cup sunflower seeds, ground in food processor
1 cup buckwheat, raw
1 cup carrot, grated
1/4 cup coconut oil
1/2 tsp fresh (or dried) parsley

sauce, nutritional yeast, vegetables galore (I used zucchini, bell pepper, serrano chili and broccoli bits)!

Easy as:
Preheat oven to 300* F
Grind sunflower seeds, set aside.
Grate carrots.
Place all crust ingredients into food processor and process until ball of dough forms.
Apply some coconut oil to a baking sheet, form your crust right on top, to however thick or thin you wish (baking time will vary) - mine was about 1.5cm thick!
Bake for 20-25 minutes
Bring oven up to 350* F
Add toppings, bake 30-45 minutes (keep your eye on it!)

bites: fruits, brown sludge drink [kale, water, lemon, orange, pineapple, banana, beet], lasagna [zucchini, sprouted tofu made "ricotta" with lemon, garlic, onion, Italian seasoning, tomato, whole wheat noodles], pinto beans, pico de gallo, thick potato fries shared with hubby, chocolate berry ice cream [frozen berries, banana, ice, almond milk, prunes]
