makes about 2-3 servings, but we ate it in 2 :)
1 cup sprouted beans (found at Costco or online)
3 cups water
celery, onion, carrots, lemon
curry powder, garlic, salt n' pepper
*serve with crunchy bread! We toasted Ezekiel bread and used it for dipping joyously!*
Bring the beans to a boil in the 3 cups water, cover and simmer for 15 minutes. Set aside. Saute your veggies with the spices in coconut oil, add lentils. Optional: blend half or all of the soup and re-heat in the pan, may add water until desired consistency is reached!
Simple. as. pie. (or soup).
also included....time with grandpa and grandma, a walk with mommy while we skyped on the phone to grandma in Mexico, a morning devotional (see: last time I spent quiet time with Jesus ~ early September~ need to get back into that, top priority!), sprouted corn tortillas made into tostadas and covered with mashed avocado n' "bbq" seasoned sprouted tofu, time with papa after work, and very expressive faces for the cameras!
