Layered Bean Lasagna

Santi is starting to actually enjoy this whole sitting-at-table-while-mami-eats thing, and I'm so glad! Gone are the days of him sitting in his Rock N' Play while we try to pay attention to him and eat at the same time. Gone are the days of him feeling out of the loop while we dine. Gone are the days of.... him still being a baby? He's growing up like mad quick, it's such a joy and such a moment of, "woah - we should have more babies I think."

Today I threw a bunch of beans in a dish layered with vegetables, threw that in the oven and called it dinner. T'was delicious. I give you, a layered bean lasagna. Minus the noodles, the cheese, most common lasagna ingredients, and plus a whole lot of spicy flavors. Win, win.

Spicy Layered Bean Lasagna
serves 2 bean lovers
  • 2 cup cooked pinto beans (mine were cooked in a pressure cooker and had a bit of their broth left on them)
  • 1 green bell pepper
  • 3 small zucchini
  • 1 tomato
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 1-2 tbsp chili powder
  • a hint of pepper
  • 2 sprouted corn tortillas (any small tortilla works)
Preheat ye ol' oven to 375* F and prepare your veggies. Dice the tomato, slice the zucchini into disks (I used a mandolin) and slice the bell pepper thin (also, used a mandolin - cheater). Grab yourself a square baking dish, mine is 9"x9", layer with one cup or so beans, half the bell pepper, half the zucchini bits, half the tomato all diced up, sprinkle with about half a teaspoon of garlic and onion powder, half the chili powder and some pepper. Place one tortilla toward a corner of the dish, rip the second tortilla in half to cover the rest of the dish. Repeat entire process for the second laer, minus the tortilla. Bake, covered with foil, for up to an hour, until the veggies are soft and before they burn to a crisp (preferably).

Enjoy with avocado and freshly squeezed lime, with a side of natural daylight.
