Today I threw a bunch of beans in a dish layered with vegetables, threw that in the oven and called it dinner. T'was delicious. I give you, a layered bean lasagna. Minus the noodles, the cheese, most common lasagna ingredients, and plus a whole lot of spicy flavors. Win, win.
Spicy Layered Bean Lasagna
serves 2 bean lovers
- 2 cup cooked pinto beans (mine were cooked in a pressure cooker and had a bit of their broth left on them)
- 1 green bell pepper
- 3 small zucchini
- 1 tomato
- 1 tsp. onion powder
- 1 tsp. garlic powder
- 1-2 tbsp chili powder
- a hint of pepper
- 2 sprouted corn tortillas (any small tortilla works)
Enjoy with avocado and freshly squeezed lime, with a side of natural daylight.
