Lentils n' Rice with Broccoli

Simplicity. Throw the ingredients together and bake it. Top with avocado. My kind of meal.

Green Lentil Casserole
Serves 2

2/3 cup green lentils
2/3 cup grain of choice (I used  TruRoots sprouted quinoa, brown rice and wild rice mix)
2 cups broccoli
2 green onions
1/2 tsp each: dry thyme, oregano, garlic powder, rosemary, pepper
2 1/2 cups water

Preheat oven to 375* F, mix all dry ingredients together in a medium size bowl. Transfer mixture to a baking dish (I used an odd-sized 9"x5" dish, but a square one would work, too) and add broccoli. Pour water on top and gently move broccoli around so it is coated with seasoning. Cover with foil and bake for 30 minutes, until water is soaked up and you find the lentils and grains soft.
