Spicy Almond Stir Fry with Quinoa

First, let's look at how happy Santi is when he wakes from a 2 minute nap! It all came about because he decided to go potty 5,000 times while sleeping, causing the Bum Genius 3.0 diaper to overflow with madness, and wet his SwaddleMe. So, in the washer went the swaddle blanekt, and wrapped in a lame blanket went our baby for his morning nap. Lame blankets = lame naps. Must. Swaddle. Must. Swaddle!




Seeing this boy sit up in his chair and not scream at me is progress. I think we have a soon-to-be-toddler on our hands! So much fun! He really thought this chair was the worst invention known to man when we first presented it to him, a gift from grandma and grandpa, we convinced the little guy - he didn't care. It was a mean chair and sitting up in it was a bad game. Now? He actually tolerates the green thing! Gma didn't buy the classic Bumbo, because parents' ratings warned it isn't a good fit for chubby babies - we have one of those - so we got the bebePOD - love it! Now, Mr. Santi boy, say thank you, grandma :)


Again, going for the 2 huuugeee servings of green leafy beauties a day, so I started off with half a head of romaine, dressed it in 1/2 a lemon's juice, a tablespoon of dijon mustard and some balsamic vinegar. Massaged a bit to bring the flavors together and hurrah! It was delicious, refreshing and light. And not "light" in a "dang, I'm starving" sort of not-satisfying way, but a "light" as a "woah, I feel great after finishing that bowl, plants taste superb!" sort of way.



The main meal: quinoa, cooked in h20. water sauteed cabbage, bell pepper and celery. spicy almond sauce = 1/2 cup almond butter, 1/4 cup Liquid Aminos, 1/4 cup lemon juice, garlic powder, onion powder, 1 serrano chili and a high speed blender. Makes a lot of sauce, keeps in the freezer well and defrosted for the next day's meal. Delishh-us. My husband is a bit crazy for this dish! and, well, we're both a bit crazy in love with this guy:
