Easy Romaine Salad

If you ever thought to yourself, "making salads is a complicated task," or, "ranch is the king," or, "eating green leaves is gross." Then think again! Today I bring to you a salad that is like no other, a meal that will fill you up and make your heart happy, a plate of greens that will bring your taste buds to extreme levels of contentment. It isn't complicated, it doesn't contain ranch, and it tastes like greatness!


Step one: chop up a lot of romaine, a whole head if you're feeling up to the challenge.

Step two: mash half an avocado, add half a lime's juice, and a dollop of your favorite salsa (up to 6 dollops total) and whip around with a spoon.

Step three: grab a tomato and cut it into bits.

Step four: plate your greens, sprinkle the tomato pieces all around in orderly fashion, top with guacamole business.

Step five: serve with a side of piping hot beans, I prefer pinto or black beans - with more salsa, but that's a given.

And you thought it was so hard, didn't you? Silly rabbit.

I have often been guilty of loving ranch and have just in the last year tried to get away from using dressings, and if I do, look for inventive ways to get the flavor I crave but with healthy, homemade, natural ingredients. I made a really yummy chipotle "southwest" salad yesterday and put the pinto beans right on top of the romaine...with corn, tomatoes, avocado, diced fresh jalepeƱos, green pepper, purple onion, tomatoes. It was SO GOOD. The dressing was plain greek yogurt, chipotle peppers and their juices, some spices (cumin, paprika, cayenne, etc) and the juice of 2 limes...really yummy! Thanks for giving inspiration and good salad and smoothie ideas. And Santiago is looking so big and cute as always!
