Silky Beet n' Orange Smoothie

In Mexico, my papa-in-law, hubs and I would walk every day to a nearby juicing stand for our morning fruity fix. Sometimes I stayed home, sometimes mami-in-law or brother Pablo went instead. Yet the liters of juice would always find their way to our bellies, no matter who picked them up that morning. The classics are: freshly pressed carrot, beet, or orange juice. The particular stand we always go to has a juicer for the veggies and a citrus juicer for the oranges, which they do separately of course. You can make any combo you wish, whether it be beet and carrot, carrot and orange, or beet and orange. My personal favorite? All three, mixed up and hanging out together, for ultimate sweetness and deliciously bold flavor. The juices go into bags, of which you can add a straw if you desire to sip all the way home (I do!) otherwise the bags are tied up and into your grocery bag they go for soon, but not-right-now, consumption.

Recently, we have been sort of recreating this drink at home in order to make our beet intake more regular since they're loaded with great nutrients. We don't have a juicer, so any juice recipe we find and fancy we simply add a bunch of water to and blend the fruit n' veggies real good. It has been quite successful, must say! I was on the hunt for a good beet smoothie recipe, and found many that included berries. I didn't want to buy berries just for our daily beet drink (also because Costco doesn't sell their organic bag anymore, boo!), so I improvised and used a small handful of frozen cherries in their place.

Oh my goodness we have done it!

Silky Beet n' Orange Smooooothie
serves uno.  

1/2 cup cut up raw beet, stems removed and peeled
1 orange, peeled
1/4 cup shredded coconut, unsweetened
1-2 cups coconut water or water
5-8 frozen cherries or berries
1 banana, optional *makes it silky, creamy and sweet(er)!

The result is silky, smooth, rich, orange, refreshing, beautiful inside and out - smoothie in a jar. Add a straw. Consume. Start your day.

This is Jesus speaking, the Son of God is reminding us of a beautiful promise: if you hear His Word (read His holy book!) and believe in God, who sent Christ to this world to redeem us from the slavery of sin, you have eternal life! You have crossed over from being spiritually dead (without Christ in your life, as the center) to ALIVE! Amen, amen. Praise God!
